This deliciousĀ beer batter crappie recipe is enough to whip-up about 5 pounds of crappie fillets for you and your buddies, so you had better get some fresh oil for the outdoor fish cooker, put the beer on iceĀ and make sure your crappie stringer is full before you start.

Ingredients:

1 cup all-purpose flour.
1 cup of your favorite beer.
1 egg, beaten
1 tsp. Paprika
1 tsp. Salt

Preheat the outdoor fish fryer oil to 375 degrees or higher.

Mix all the ingredients until smooth. It should be about the consistency of thin pancake batter. Add more flour or beer to adjust the thickness, as needed.

Dry the fillets well on both sides. Dip the fillets in the batter and coat them well. Allow the excess batter to drain back into the bowl for a few seconds. Drop fillets into the fryer or oil and fry until golden brown. Serve with coleslaw, hush puppies, Bush's baked beans and your favorite suds.
