Crappie Holiday Fudge

OK, we're not really going to put crappie pieces in the fudge, but it did get your attention, didn't it. The holidays are coming, so this recipe will show you how to make a batch of fudge in under 10 minutes that is so rich, creamy and mouth-wateringly good, people will think you spent hours over a double-boiler with a candy thermometer!

We'll start with a quick no-cook basic fudge recipe that I swear is so easy to make even a Democrat can do it without government assistance. Then I'll show you how to dress it up with chopped walnuts and cherry pieces.

Note: DO NOT use generic (store brand) ingredients.

1 12oz bag Nestles Semi-Sweet Chocolate Chips.
1 14oz can Carnation Sweetened Condensed Milk.
1 Teaspoon Real Vanilla Extract.

Place the unopened can of Carnation sweetened condensed milk in a bowl of hot tap water for about 10 minutes.

While wating for the condensed milk to warm, empty the entire 12oz bag of semi-sweet chocolate chips into a medium size glass mixing bowl.

Now pour the entire can of condensed milk into the mixing bowl with the chocolate chips and mix well with a large spoon.

Put the mixing bowl into the microwave and cook on high-power for 30 seconds. Remove the mixing bowl and stir the mixture. Place the mixture back into the microwave and cook for another 30 seconds. Remove mixture from microwave and stir briskly with a fork.

The chocolate chips should be completely melted and blended with the condensed milk and the mixture should have a 'glossy' look to it. If not, you may need to cook it for another 30 seconds.

Add 1 Teaspoon of vanilla extract to the mixture and blend well with a fork.

Pour the mixture evenly into a 8" x 8" x 2" glass baking dish lightly coated with non-stick cooking spray, cover with plastic wrap and allow to cool at room temperature. Fudge will thicken and set-up as it cools. Cut into squares and place on serving dish.

Adding Chopped Walnuts and Cherry Pieces:

Note: You can usually find a bag of cherry pieces on the baking isle at the grocery store right next to where they keep the chocolate chips. If not, try Super-Walmart.

About 1 hour before making fudge, place 3/4 cup of cherry pieces into a sandwich size zip-lock bag and put into the freezer. Fold frozen cherry pieces and 3/4 cup chopped walnuts into the fudge mixture just before pouring fudge into baking dish.

Fudge with chopped walnut pieces and cherry pieces is absolutely delicious!
