Tamaulipas is a city in Mexico near Lake Guerrero, where I have caught tons and tons of crappie, not to mention a few hot señoritas and my fair share of hangovers. Anyway, this is one of those casseroles where the amounts are unimportant. Just fill up the baking dish and shove it in the oven.

Crappie Living the Good Life In Old Mexico!
Preheat the oven to 350 degrees.
Have a sprayed or greased baking pan handy. Lay the crappie fillets in the bottom of the dish.
Cover them with a layer of your favorite red (tomato based) salsa.
Cover with foil and bake for 20 minutes. Remove from the oven, uncover and place a layer of cheese on top.
Scatter onions and jalapeño slices on top and return to the oven uncovered.
Continue baking until the cheese melts and get bubbly.
Esta muy bueno with spanish rice and refried beans!!!!
