Mix one egg per cup of milk. Make enough mixture to cover the fillets and let them soak for one hour. Remove fillets, drain and place on wax paper. Salt and lightly sprinkle with Lemon pepper seasoning. Roll fillets in a well blended mixture of 1/3 cracker meal and 2/3 cornflake crumbs.
Deep fry the fillets in a fish cooker until golden brown.
Remove and drain on a paper towel.
