Potato Chip Coated Crappie

1-1/2 pounds crappie fillets
1/3     cup of buttermilk
1/8     teaspoon of pepper
1        bag of potato chips, crushed (4 ounces)
3/4     cup of cornflake crumbs
1/4     teaspoon of paprika

In a shallow dish or pie plate mix buttermilk and pepper. Place mixture of crushed potato chips, cornflake crumbs and paprika on a plate or on wax paper.

Set over to broil (500f) and grease broiler pan.

Cut crappie into serving size pieces; dip in buttermilk and coat with potato chip mixture, pressing lightly.

Place coated crappie fillets on broiler pan and broil 6 inches from heat for 3 minutes.

Turn fillets over and continue broiling until fish flakes easily at thickest part, 2 to 3 minutes.

Recipe makes 4 to 6 servings.
